Succulent Slow-Cooker Chicken
This is easy, excellent chicken every time. Even the white meat is tender and flavorful! Add a veggie or two and some biscuits for an outstanding meal you'll really enjoy!

Step 1 - Gather Ingredients
2-4 teaspoons salt
2 teaspoons paprika
1 teaspoon cayenne pepper
1 teaspoon onion powder
1 teaspoon thyme
1 teaspoon white pepper
1/2 teaspoon garlic powder
1/2 teaspoon black pepper
1 large roasting chicken
1 cup chopped onion (optional)
Step 2 - The Spice Rub
Clean the chicken, removing any giblets from the inside. In a small bowl, combine the spices and rub spice mixture liberally over the chicken. Place the chicken in a resealable plastic bag and refrigerate for several hours or overnight.
Step 3 - Time to Cook
When ready to cook, put chopped onion in the bottom of the crock pot. Add chicken. No liquid is needed, the chicken will make it's own juices. Cook on low until done (usually 4-8 hours). Serves 4.
Note: A chicken with a pop-up timer is recommended.
Step 4 - Final
As a bonus - make a super-delish soup stock: Add the bones and skin back into the liquid that was left over in the crock pot, add 5 cups of water and whatever vegetables you have on hand (carrots, celery, onion), and cook overnight (12 hours) on low. This will reduce into a wonderful homemade chicken soup stock.
Want a crispier chicken? Transfer the chicken to a baking dish and put it under the oven broiler for a few minutes. (Careful not to burn!) Enjoy!
