Easy-As-Pie Cake Cookies
Like cookies? Cake? How about "cake-ies?" This super-simple recipe is the perfect choice for every holiday on the calendar.
Let's get started »
Step 1 - Gather Ingredients
1 box cake mix, any flavor: Lemon, Chocolate, Red Velvet, Orange
2 Eggs
1 8 oz. container of Cool Whip
Powdered Sugar
Parchment Paper
Step 2 - Preheat & Make Batter
Preheat oven to 350 degrees and line a cookie sheet with parchment paper.
Pour the entire bag of cake mix, the eggs and the entire 8 ounces of Cool Whip into a bowl and mix well with a large spoon. The batter will be a thick, taffy-like consistency. Pour a generous amount of powdred sugar on a large plate. Cover your hands in powdered sugar. Take a golf sized ball of of batter and drop it into the powdered sugar. Roll the batter into a ball so that it is covered with powdered sugar and then place it on the parchment paper/pan.
Step 3 - Bake Cookies
Bake at 350 degrees for approximately 12 minutes. Watch the cookies closely and take them out of the oven when the tops start to look 'cracked'. Slide the parchment paper with the cookies on top onto a cooling rack. (The parchment paper will keep you from getting powdered sugar everywhere!) Be sure the make the second batch as quickly as possible as the batter tends to harden rather quickly.
Step 4 - Final
Allow to cool and enjoy! These cookies will stay as colorful as the original cake mix was, so they are great for holidays and parties!
