Baked Sweet Potato Latkes

It's a different take on hashbrowns that makes a great holiday breakfast.

Step 1 - Gather Ingredients

2 pounds grated sweet potatoes
1 medium onion, finely chopped
2 eggs, beaten
1/4 cup flour
1/4 teaspoon baking powder
1/2 teaspoon salt
1/2 teaspoon ground cinnamon
1/4 teaspoon ground nutmeg

Step 2 - Preheat

Preheat the oven to 400°F. Coat two baking sheets with cooking spray.

Step 3 - Combine Ingredients

In a large bowl, combine all ingredients. Drop by quarter-cupfuls onto the baking sheets. Flatten with a spatula.

Bake for 25 minutes. Flip and bake for an additional 10 minutes.
